NCCE050  Art of Wine Making


Prerequisite: None


While in this class you will learn the wine making process starting from juice. The class will begin with a wine tasting, and some general wine tasting information, then go into the actual wine making process including adding yeast, racking out, hydrometer reading for measuring alcohol content, degassing or driving off residual carbon dioxide, wine additives for ceasing fermentation and clearing agents, filtering, and bottling. There will be groups of four students working on four batches of wine. The wines we will be making for this class are a Pinot Grigio, an off-dry Blush, and 'oakey' Italian Blend, and a Cabernet Franc Dessert Ice Wine. During the final class we will be bottling the wine and each student will take home two bottles of each wine made, for a total of eight bottles of wine. This class is limited to students 21 years and older.
